Manu’s Bodega
Manuel Alfau—who’s worked at Blind Pig Bistro, Anchovies and Olives, and La Bête—used to make his Dominican sandwiches on a grill in front of Capitol Hill bar Montana. At his place in Pioneer Square, what you want to get is the puerco asado: slow-roasted pork shoulder sandwich, topped with chopped cabbage and pickled onions, served on a Macrina roll. The marinated pork is so soft and juicy, you could practically spread it with a butter knife, but the secret weapon is chimichurri, which is oily and vibrant with a garlicky kick. A handful of napkins will valiantly give their lives in service to the eating of this sandwich. For best results, enjoy it with a Presidente beer.
