One of my favorite memories from childhood: when my family went camping, my mother would make pancakes from scratch, frying them in bacon grease in a cast iron skillet. They were delicious, with these wonderful crispy edges.
My go-to breakfast on weekends is French toast. A few drops of vanilla in the batter, and topped with yogurt and berries. Accompanied by "Je T'aime,...Moi Non Plus."
@1 Because pancakes from scratch are delicious (especially if you use fresh eggs) and besides, they take something in the range of 30-60 seconds longer than the mix. There is no real excuse for not making pancakes from scratch.
@6, interestingly, pancake mix and other self-rising flours are some of the very first processed foods, going back 175 years. Old-time mercantile stores throughout the pioneer west had barrels of self-rising flour and pancake mix on the floor next to the plain flour and the sugar.
Pancakes from scratch? Why...when there's Krusteaz...made last Saturday.
