Ahem. The Enomatic does not "infuse" the wine with nitrogen, which suggests that it blends, mixes or otherwise bubbles into the wine, which it does not. Nitrogen is inert, and neither bubbles through nor dissolves in the wine. Thats why it's used in the system, because it displaces the oxygen which would otherwise blanket the wine (and cause oxidation). Also, oxygen under pressure does dissolve in wine (see Champagne) and soda pop (see Coke). Nitrogen does not, thus can be used to pressure wine into flowing through the device's tubes into your glass. Where you then swirl, sip and (if you are so inclined) enjoy it.
I'm assuming this is around 12th and Union, but I wonder why Slog doesn't include Google Maps links/images in these reviews? I'm far too lazy to do it myself.

@1: Well put. I didn't mean to imply infusion in that way, rather in the "to administer or inject by infusion" sense—the machine infuses the nitrogen into the bottle, not into the wine itself. I might have been more specific. Ahem!
