Maria Hines offers Eastern Mediterranean food under the glow of 32 mosaic lanterns imported from Turkey at Golden Beetle (which is certified organic, just like her restaurants Tilth and Agrodolce). The small plates top out around $10, and are delicious. Golden Beetle’s yogurt dip is better than anything like it you’ve ever tasted, alive with the most sprigs of dill and tangy-fresh Greek yogurt crawling with cultures. The golden beetle—the actual insect—is an ingredient in the legendary North African spice mix ras el hanout. (It’s also said to be an aphrodisiac like Spanish fly.)
