Baguette (Capitol Hill)

Seattle, WA 98122

Website

A to-go spot on Madison serving Vietnamese bahn mi sandwiches that cost more but also have more filling than your typical I.D. ones. The owners also have a Baguette in Corvallis, Oregon, that people in Corvallis, Oregon, seem to really, really like.

Highly recommended

Here, the bánh mì is the attraction, with many welcome variations on the theme including a tofu option, in addition to a few other offerings such as hom bao, sticky rice and beverages. For me, and only two blocks away from home, it was an excellent sign to see that this take-away menu is essentially committed to one menu item. When a restaurant lists multiple choices, it can be difficult to find out exactly what the specialty may be. When it's focused on one, you can assume they must be serious about it.

And it certainly shows: the baguette is precisely what you will find in southeast Asia - crispy outside, soft inside. The cha lua (pork paté) is fresh and flavorful, as are the abundant pickled vegetables and coriander. For $4.95, this represents an incredible value for price.

The only improvement I could suggest, and this is purely a personal preference (after many dozens of bánh mì sampled within southeast Asia), would be for a bit more vinegar and sugar coming through in the taste of the pickled vegetables - they do contrast deliciously the richness of pork and mayonnaise.

Run, not walk. They're only open for lunch.

Delicious!

Ever since Green Papaya closed I've been lamenting the lack of a close by veggie banh mi option for lunch. I would occasionally drive down to Bambuza on 9th and Pine when I've been jonzing. They make perfectly acceptable banh mi at Bambuza, but I think from now on I'll be going to Baguette.

I visited today for the first time and was very pleased. The vegetarian banh mi was filled with veggie ham, fake chicken, mushroom pate and all the usual yummy banh mi fixings, served on a delightfully soft but crusty baguette. The bread was really good. It was also refreshing to have a non-meat option other than tofu (I do eat meat but am not a big fan of the gelatin tinged mystery meat-like fillings common to banh mi).

Service was very friendly. The sandwiches are $4 a pop, IMO about right for for a high quality, larger than average, delicious banh mi. For meat eaters, they have hom bow as well as 3 or 4 different traditional meat-filled banh mi options. Yum!
