Belle Pastry, with two locations in Seattle and Bellevue, is owned by Frenchman Jean-Claude Ferré; he’s also the executive pastry chef. According to a real French person, M. Ferré’s croissants are top-notch: “A true croissant, with the same taste as those I’m used to eating in Paris... evidence that only French people can make proper pastries.” Plus, they play classical music. And even if French people listen to classical music less than they used to, it’s quaint to eat your pastries and think on a time when they—and their music—ruled the world. Ravissante.
