Restaurant Details

  • Middle-of-the-night pizza by the slice! Juliano's is a Capitol Hill hole in the wall serving made-to-order pizza into the wee hours every night. Owner Juliano Cabrini makes your slice to order and then sends it on a slow journey through a conveyer oven while you stand by salivating. The house four-cheese special is far from a regret-laden gut-bomb: an extra-delicate herbed crust cradles homemade tomato sauce and a reduced-fat four-cheese blend in place of greasy mozzarella. You can concoct your own combo from fresh toppings including spinach tossed in balsamic vinegar, prosciutto, bacon, juicy sun-dried tomatoes, brie, Swiss, even a pretty damn delicious vegan cheese. Whole pies are also available; call first if you don't want to wait.
  • Features: Cheap Eats, Late-Night Dining and To Go
  • Cuisine: Pizza and Vegetarian
  • Serving Hours: Sun-Wed noon-1:30 am; Thurs-Sat noon-3 am

Worst Calzone Award!!

My husband and I stopped in this place for a quick bite on a Saturday evening. After scanning the way overpriced menu, we decided to split a Calzone. Now one would think if they were to pay $12 for a Calzone, it would be the biggest, best, Calzone one had ever tasted. Picture a deflated greasy Calzone- more like a quesadilla, with balsalmic vinegar dumped on it. The owner, a loud mouthed prick, asked how we liked it. My husband told him it was the worst calzone we had ever had, and long story short...we got kicked out, YES, kicked out. Some little Emo douche bags started yelling and swearing at us after they heard our very calm response to the owner, and told us we were used to the "greasy breaded crap" that is served everywhere else. Oh I'm sorry, forgive us for expecting to receive what a Calzone in every Italian place across the world looks like. When we asked how we were even supposed to eat it (it didn't come with utensils) we were told by the peanut gallery "with a knife and fork you lazy piece of shit!" So I located a plastic knife & fork, which broke shortly after using. So instead of the owner kicking the obnoxious morons out who probably got free scraps from the owner, he decided to kick us civilized people out instead...nice.

The guy at the counter is super aggro and tries to overcharge for sub-par, correction: downright nasty food. Go to "In the Bowl" on Denny and Olive for good Vegan food. This place is an unhygienic mess.

Peppe and his pizzaioli THEORY OF VERACE

The World's Best Pizza?
Lisa Cabrini

Peppe and his pizzaioli would like you to know that pizza is not an American invention. Deep-dish Chicago pies and New York slices are just aberrations from the true pizza, which he maintains is from Naples, Italy.

To this end, Peppe (known on his drivers license, and nowhere else, as Giuseppe Miele), founded in 1988 the North American chapter of the Associazione della Vera Pizza Napoletana, or Verace Pizza Napoletana ("verace" is Neapolitan slang for authentic), or VPN. Originally created in 1984 in Naples with the help of the local chamber of commerce and the regional Italian government, this association certifies pizzerias that produce pizza adhering to a strict set of guidelines, supposedly based on Neapolitan tradition. Pizzaioli, trained pizza chefs, are sent out to restaurants to confirm their claims that they deserve the seal of approval from the VPN.

With sales for 2000-2001 close to $30 billion, pizza enjoys a big slice of the U.S. food industry. While 51.5% of those sales are by the top 25 chains, such as Yum! Brand's (nyse: YUM - news - people ) Pizza Hut, privately held Domino's and Papa John's (nasdaq: PZZA - news - people ), the rest are smaller chains and independent pizzerias.

Competition is stiff, and the turnover high. According to Pizza Marketing Quarterly, from July 2000 to July 2001, 3,547 pizza outlets closed down, but another 4,904 opened. Within such a huge market, Peppe says VPN offers pizzerias a way of distinguishing themselves from others by tapping into a fund of myth and tradition that surrounds the Neapolitan pizza.

He has a long way to go though. To date, only nine pizzerias in the U.S. have signed up with the VPN. And only one of those, La Pizza Fresca ("The Skeptical Chef"), is in New York City. In Italy, however, membership is higher, with over 50 in Naples and the surrounding area, as well as others scattered around the country. The association is dedicated to promoting Neapolitan pizza as the authentic and original pizza, through displaying the VPN logo, participating in fairs and competitions and, most importantly, by making pizza that abides by the rules they have laid down in their charter ("How To Make A Neapolitan Pizza").

"There are different kinds of pizza," admits Tony May, the owner of several Italian restaurants in New York and president of the Gruppo Ristoratori Italiani, an organization of food professionals working in the U.S. dedicated to promoting Italian cuisine. May says the VPN, which he supports, is just about not calling a pizza Neapolitan when it's not. "Americans think pizza was invented in Chicago," he lamented. He would like to see the VPN be more active in this country, he said, spreading the word about pizza's origins and preserving the identity of Neapolitan pizza.

What is the best kind of pizza?
Neapolitan
Chicago
New York
California or
Seattle style in Juliano's pizza, Pine st Seattle, WA.

But what if the tradition being defined never really previously existed? Robert Sietsema, the Village Voice's food editor and restaurant critic, says, "The joke's on them. Pizza was invented in the U.S." The Italians are mounting a rearguard action, trying to claim pizza as their own, but it's all a marketing ploy, he said. He says pizza as we know it was invented in New York, by Italian immigrants such as Gennaro Lombardi, whose pizzeria Lombardi's, on Spring Street, opened in 1905. "I'm not a patriotic guy, except when it comes to pizza," said Sietsema.

Pizza, as a flatbread with toppings, has been around since ancient Greek and Etruscan times. Whoever first thought of combining cheese and tomatoes is a person as obscure in history as the inventor of the wheel. There is a possibly apocryphal and much-repeated story about a Neapolitan chef, Raffaele Esposito, who in 1889 created a red, white and green pizza (tomato, mozzarella and basil) for the Italian queen, Margherita, who liked it so much that it was named after her. What the VPN has done is take the legends and mix them with some traditions and come out with a marketing tool. "Authentic" and "traditional" sound good, and they allow the pizza place to buy into the myth of a Platonic ideal of pizza.

VPN clearly has its work cut out for it. In New York City, John's Pizzeria is currently ranked No. 1 on Citysearch's best pizza 2002 poll. La Pizza Fresca doesn't even get a look in the top 20. Michael Frank, who's managed John's for the last eight years, hasn't even heard of the VPN. He's dismissive: "We're not going to join some club. You donate $250, and they send you a plaque saying it's New York's best pizza. We get a lot of letters like that--maybe we got one from this organization."

To join the Associazione della Vera Pizza Napoletana, you not only have to make Neapolitan pizza, there's also the small matter of a fee: $200 for registration, yearly dues of $200 and $300 for the Verace Pizza sign, with a total due at sign-up of $700.

However, Peppe insists that joining is not as simple as just sending off some photos and $700. He says that other members also travel to the pizzerias to verify that they are adhering to the guidelines--not using oil in their dough, or, God forbid, a coal-fired oven. Consequently, expansion is going to be difficult for the VPN in the U.S.; Peppe said that as more members join, they would have to get local supervisors to check up on claims.

It could also be profitable. Peppe's restaurant, Antica Pizzeria in Los Angeles, runs three-day training courses that cost $1,300 for chefs or restaurant owners who want to learn the art of Neapolitan pizza making without going to Naples.

The final word, however, goes to Victor, at the Brooklyn pizza institution Grimaldi's, consistently rated No. 1 for pizza by the New York Zagats. I was trying to ask him what kind of pizza they made there--Neapolitan, Sicilian, Roman, or just New York. In a thick Italian accent, fed-up with my wasting his time with this foolishness, he broke in: "You don't understand, it's just pizza."

Pizza and Sex

Some people say that sex and pizza are the same--even when it's bad, it's still good. But fuck that. There is no room in my world for bad pizza, and that's why I go to Julianos. The crust is perfect--thin and crunchy but with a heft to it--and the toppings are simple and perfect. Plus, the place is open until three in the morning.

How awesome is that?

Late Night Best Food

When I am sitting at a bar and my friends are talking to me and I am listening to them there comes a point in the night where my mind starts drifting from the conversation and in a subtle way my thoughts are redirected towards the prospect of either going home with a lovely lady or eating some delicious food, and when the lady is not an option, I go to Julianos Pizza because the food there is the only thing that I know can match my hunger for love, and I love the pizza there, a lot.

hillside decent

as the walk got longer and longer, the wonder of when we were going to enjoy some intense flavors and bites for our day off became the topic of our travels. we realized the potential awakening in our heart if we were to put the pizza hat on the head of our night together. we danced down Broadway past all other options and disguised our hungry yet excited faces with determination and fortune of knowing where to receive the best Seattle vegan pizza.most of all, the personality that is so rich in the restaurant itself, Juliano our pizza creation artist. from the glamor of choosing from the delicious varied options to being able to enjoy some chess and chill vibrations, the content we've reached tonight is beyond what was first imagined when we thought of visiting this local manic feed spot. big ups Seattle for being the harbor of such a magnificent house of PIZZA brilliance! wish granted.

Juliano's Food always makes me happy

Juliano is always open late. The food is a true delicacy, I know I'm eating healthy, but it is sooooo good, it's like dessert. I don't know what else to say. If I could eat here every day, I would. I live in Issaquah, and sometimes my room mate and I drive out here to Seattle, just to enjoy some classic Juliano's. The first time I tried it, I fell in Love, and ever since, it's my favorite pizza, salad, and calzon, and more. I could go on and on, but I think you guys get the idea. I'm a loyal fan, and plan to be as long as Juliano stays around. In fact, when he retires for good, I will try and convince him to teach me how to make his killer calzon, and give me his secret recipe. I doubt he ever would do it, but I'll try and persuade him anyway. I'll write more later on this subject about how Juliano's is the BEST! Later...
Russell

PS I hope to go snowboarding with Juliano this winter 2009! The snow is good, and spring time will be awesome. Call me bro. Peace!

Vegan and Gluten Free Pizza - the best in Seattle

For people with gluten intolerance, it seems like pizza is not an option. But then I found Juliano's. He uses a brown rice flour and spinach dough to create a thin and crispy base. His sauce is excellent. With toppings like sun-dried tomatoes, garlic chicken, and greek olives, you can create a gourmet pizza that you can't find anywhere else. And the atmosphere is fun, alternative, and kinda crazy (in a good way). Go!

Gluten-free and vegan pizza!!!

Where in Seattle can you get gluten-free and vegan pizza?!? I just left a gig in downtown, and happened across this little place next to the Baltic Room. This place must operate entirely off word-of-mouth, because they don't even have a sign out front. But wow-oh-wow! The pizza is FANTASTIC! And the proprietor is this colorful Italian character who will sing karaoke with you! I had the gluten-free with vegan cheese, but the owner will encourage you to make your own according to your taste. Stop by, and try it!

the best. i've had di fara's (Stanislaus, Italy #1) pizza but this is the best. crispy, thin, tasteful and soft haven't tried the sun-dried tomatoes or spinach dough yet but looking forward to it. don't bother calling ahead to 206 625 9922 as Julianos will probably space out and forget about you. worth the wait (approx. 5 minutes from order to hand-off). comes out hot so watch out and don't get burned.

glutenful pizza with vegan "mozzarella," basil (topped with balsamic vinegar), tomatoes and olives.

The hours posted on the door of Juliano's Pizza, a vegan pizzeria on Capitol Hill, read "Noon-3 a.m." Apparently these hours are subject to change at Juliano's will, as a "Will Return At…" sign frequently graces the often locked front door.

Juliano's is a small one room restaurant located on Pine Street and Minor Avenue. The single room is adorned with birthday gift bags, Christmas ornaments, bike gears, googly-eyed drawings and posters on the walls. Faux grapevines twist along the ceiling while snowboards rest on the wall and medieval armor hangs behind the counter.

Juliano's offers vegan, gluten-free and "traditional" pizzas and calzones. Calzones and 12-inch pizzas are "glutenful" and 10-inch pizzas are gluten-free with a plethora of toppings to choose from. There is one vegan cheese option, a "mozzarella." Along with regular meat toppings, vegan meats are available too.

The menu denotes which toppings are vegan and gluten-free.

Pizza can be ordered by the slice, quarter-pie or half-pie.

Salads and other bread sides are available, even vegan cheesebread.

Juliano himself cooked and served garlic bread and a 12-inch glutenful pizza with vegan "mozzarella," basil (topped with balsamic vinegar), tomatoes and olives.

The crust was crunchy and crumbly, delicately dusted with herbs and like nothing this writer has ever tasted before. The garlic bread is made from the same crust, topped with garlic and cheese, and cut into generous slices. The vegan cheese tastes just like regular cheese; however, the consistency is a little different. It doesn't quite melt the same but it is just as delicious.

Toppings can get expensive though. The pizza and garlic bread was $26, but it was definitely worth the price.

It's been reported that Juliano's Pizza is a hotspot for midnight pizza, so call ahead if you plan on coming in late and don't want to wait. Juliano said they have a karaoke machine and often bust it out on random weeknights. He said they also host a lot of birthday parties, which explains the gift bags on the wall.

Juliano's Pizza is a fun and eclectic hole in the wall located at 1211 Pine St. Vegan or not, it is worth the walk for a pizza experience one won't find anywhere els

During my hell exam week, i went to Juliano's for some amazing pizza. Like usual it was tasty, and the service was great. We played checkers while waiting,so even waiting for food was enjoyable. Leftovers?!

We went there on a Sunday and were served pizza left over from the night before. The pizza was re-heated and THEN the toppings were added (cold meat, cold veggies right out of the can...) It was so gross! I would rather not give a star rating, but that is not an option.

vegan slices!

The pizza here kicks ass because you can order a custom slice that he makes fresh! Not like another certain place that just throws toppings on a piece of cooked cheese pizza and reheats it. Everything is fresh, tasty, and piled massively high. The salads are massive, too, and they even have vegan cheesebread!

I just came from Italy, and had a ton of pizza. There was nothing like Juiliano's! I was in Germany last week and I kept looking for pizza that was better than Italy-and found nothing... Juliano's was by far the best pizza that I had on my entire European vacation. FUCK Italian pizza, and French pizza (only went to paris, which I loved, but the pizza was crap)...(Same with "New York Style" pizza...) Long story short--This little place on Capitol Hill--"Juliano's Pizza" was by far the greatest experience I have had--and by far the best DAMN pizza you will get! TRUST ME!
