Brought to you by Ethan Stowell (Anchovies & Olives, How to Cook a Wolf, and Tavolata, more) Staple & Fancy has a local, seasonal, Italianate menu with a "fancy" option where the chef makes a multicourse feast for your whole table. I never do this but you should know....

Ethan your place is not working on a Thursday night. friends in town from NYC. let's go to ballard. tasting menu perfect. seattle is not NY, but we've got great food.Our friends are fun arty types so it was going to be a good night. Let"s say if it wasn't for the fantastic bartender, who has a delightful personality and can multi task we might have stood there for 1/2 hour before anyone even greeted us and we had made reservations. I don't know what was going on but employees should leave it at the door. Get rid of your snotty little hostess or feed her. Her bad energy ruined our evening and she was only filling water glasses. Looking back I wish I would have asked her not to come back to our table. $500.- for dinner to have an unpleasant time. I like long pleasant dinners, with the Italians it can be 4 hours of delight, but your kitchen was not working that night. We were embarrassed by our choice, the food was sporadic and not that good.wish we would have kept walking to the Walrus and the carpenter.

Great Place

I loved the design, and the staff were very good. The appetizers did overshadow the mains, but the everything was very good. You had to love anchovies to ike my main, and the staff had good knowledge of the food and warned me. Dessert was pineapple upside down cake, which was simple and delicious.

Obviously, there was not techno music, dirty rags or waits between dishes. I thought I was a demanding diner, but people in Seattle seem to be willing to write a horrible review b/c they felt slighted or cheap.

just mediocre

not sure what all the hype is about. walked in to super loud techno music--so loud that the four of us had to scream at each other. server was nice but seemed inexperienced. he wiped the table down in between dinner and dessert with a dirty/stained towel that looked like it had been used to mop the floor. two entrees came and we waited several minutes before the other ones arrived. the two that came first got cold while we waited for the other two to show up. the steak dish was a poor cut of meat. most of it was unchewable. the swordfish was grilled just fine but the plate was bland--3 halves of small potatoes and a tiny bit of sauteed veggies. no sauce, vinaigrette or interesting flavors. the linguine with clams had NO salt or seasoning and came with a gummy sauce. the appetizer salads were fine. the gazpacho soup also needed more seasoning. the chocolate budino was fine but really just chocolate pudding. in other reviews of this place, people can't stop raving about the tasting menu. perhaps that's the way to go, but i won't ever go back. maybe ethan stowell should stop opening new places and promoting himself and actually concentrate on serving good food.
