The cute little house on 12th Avenue formerly known as the People’s Republic of Koffee is now Scratch Deli. Owner Ian Thackaberry has a pleasingly Dickensian name and an exceptionally nice demeanor, and he uses all-local ingredients: Essential Baking Company Dutch crunch rolls, meats from Northwest collectives or Painted Hills. His highly delicious sandwiches—like Cuban pulled pork, Caprese, a quasi–banh mi, plus gluten-free and vegan options, $7 or $8 each—are stuffed so fatly full, half is probably enough, so bring a friend and try the potato salad, made with a tiny bit of real truffle oil. I second Bethany. I've been slowly working my way through their menu, and have enjoyed every sandwich I've ordered. Comfy place to sit down and eat, too.
