In a food landscape increasingly riddled with trends and gimmicks, it can be hard to distinguish between what’s essential and what’s dispensable. But as Julia Child once said, “You don't have to cook fancy or complicated masterpieces—just good food from fresh ingredients.” In his new cookbook Autentico: Cooking Italian, the Authentic Way, Rolando Beramendi instructs home cooks on how to get back to the basics of Italian cooking by starting with a well-stocked pantry and shopping for the freshest seasonal ingredients. Montlake’s artisanal Italian eatery Cafe Lago, which makes pasta by hand every morning and bakes pizzas over an applewood-fired oven each night, will produce a six-course menu in the spirit of Beramendi’s minimalist approach.
