The hot and spicy veggie dumplings at Szechuan Noodle Bowl are, bar none, my favorite Chinese Dumplings in Seattle. I've been to all the fancy newcomers, but none of them best these dumplings. Also agree that the Green Onion Pancake is better there, although they also have a good one at Little Ting's up on Greenwood (that place is also solid all the way around).
I love Sichuanese Cuisine and Szechuan Noodle Bowl, but my absolutely knockout favorite Sichuan restaurant is Spiced, in Bellevue, which has a more extensive menu than any of them. Absolutely worth the trip.
Chinese places totally suffer from having terribly nondescript dish names. You mentioned some good dishes, but it'd be great to have a longer list of what you consider to be good things to order, and a description of what they actually are.
