Moonlight is a great spot. I have know doubt that the Pho is good there. I'll have to try it. But I've been eating Pho in Seattle for over 25 years now, and the beef and chicken Pho at Ba Bar are the best I've ever had. I didn't want to like them, because they're also some of the most expensive Pho in Seattle. But I had to give credit where credit was due.
Fake Chicken at Moonlight Cafe is great though. It's an awesome place that everybody should patronize.
Moonlight is the best! The veggie vermicelli bowl #37 is my weekly order- the taste and texture of their seitan is even better than their lemongrass pork (which is also outstanding).

Moonlight's food is pretty good, but they sure could stand to clean the bathrooms better.
I'm sure it's delicious but I don't think anyone would mistake anything in that photo for meat.
I've been hungry pho a long time.
Sorry
What do they make vegetarian beef broth out of?
I would love to love moonlight, but they can't get an order 100% right no matter how many times you go over it.

What are the fake meats made out of?
Very Good, but "best" in Seattle? Come on, there is no single "best," there are many great,,,,why the obsession for a "best." ? anyway, slurp on!
@2 - not to mention the parking lot
