Copperleaf is part of Cedarbrook Lodge, located one mile from Sea-Tac Airport—an area heretofore known for an emphasis on seediness, not sustainability. But Copperleaf is doing the local/organic/etc. thing—and chef Mark Bodinet has worked for Thomas Keller at the French Laundry, so they’re doing it very well. Also: composting, water reclamation, 100 percent organic bamboo fabrics, and hand-blown glass sculptures by local artists. You could smell the change in the air at Cedarbrook Lodge, but it’s probably fragrance-free.
