Bethany, what's your recipe for a champagne cocktail? Some believe it's just a glass of champagne. Some bartenders have told me it's a glass of champagne with a teaspoon of sugar stirred in (which is why I've never ordered one). Recently in a magazine somewhere (maybe it was Martha Stewart Living?) a champagne cocktail was a glass of champagne lightly flavored with one of a variety of liqueurs or fruit nectar.
"Champagne Cocktail" has 2 meanings:
1. A type of cocktail involving champagne, such as a mimosa, a french 75, or
2. A specific cocktail made with a sugar cube, several dashes of bitters, and champagne. This is the classic recipe.
A classic champagne cocktail is #2 above. It's nice because the glasses (or, hell, plastic cups) can be all set up with a sugar cube dashed with bitters in the bottom of each one, the champagne can be kept on ice, then you just pour as the guests arrive. Also, it's sweet enough for people who like sweet cocktails but not too sweet for the rest of us. I want one now!

Angostura bitters
Champagne [Sparkling Wine]
Lemon or orange twist, for garnish (optional, but preferred)
Set the (glass or plastic) flutes on the table
Drop a sugar cube in each flute
Add a dash of Angostura bitters (two drops) onto the sugar cube
Voila! It's ready to be topped of with CHILLED sparking wine
