I do wish you had included Chef Wayne Johnson. Though he's now at Shuga Jazz Bistro in Renton, he was Executive Chef at the Mayflower Hotel's Andaluca for many years. Here's the url to his bio: http://www.shugajazzbistro.com/chef-wayn…

Thanks. Wayne Johnson has contributed so much to Seattle's dining scene, including mentoring many people. It was hard to limit this list to five.

What a great set of interviews! They make me wish I were back in Seattle so I could go visit all these folks' businesses.

I wish Tarik was doing more work for VICE. The little Munchies special he did was really good. He's a natural.

I wish you could have included more! I have a special place in my heart for Daisley Gordon of Campagne/Marche fame. He's so warm and friendly and his food is incredible.
