“Breathe the air, drink the drink, taste the fruit, and resign yourself to the influence of the earth,” Henry David Thoreau wrote. This is the quote that sommelier Luke Wohlers (formerly of RN74, the Herbfarm, and Eleven Madison Park) chose to represent his 12-seat wine-bar pop-up at Little Uncle in Pioneer Square. While that brick-walled, subterranean space bears no resemblance to the Massachusetts pond, his wide-ranging wine list—with 2.5-ounce pours going from $4 to $24 each—and low-key imparting of wine knowledge are reportedly transcendental.
