Rhubarb, also known as the "pie plant," is a quintessentially Northwest ingredient and a harbinger of spring. Here's where to get your fill of the blush-pink, sweet-tart stalks this season, from rhubarb mimosa ice cream to rhubarb doughnuts to savory rhubarb chicken dishes.

Autumn Martin's wildly popular molten chocolate cake emporium currently serves a rhubarb bread pudding. They fold the "the brightest pink, zingy organic rhubarb" from Puyallup-based Richter Farms into a vanilla bread pudding, topped with house-made roasted rhubarb jam (made with roasted whole Gaya Farms vanilla beans) and a scoop of vanilla ice cream, and finished with a drizzle of rhubarb syrup.

The booze-and-dessert walk-up window suggests Seattle Cider as a pairing for their strawberry rhubarb crumble pie, made with Northwest strawberries, rhubarb, and streusel.

The longtime Pike Place Market staple’s fresh rhubarb piroshky, which pairs puckeringly tart, tangy fresh rhubarb slices with rich Bavarian cream, is worth the wait in line.

For a savory take on rhubarb, Jerry Traunfeld's restaurant inspired by Indian flavors and seasonal Pacific Northwest produce makes a dish called Mad Hatcher Chicken with rhubarb, coriander, and corona beans, available as part of their Seattle Restaurant Week menu. While you're there, order yourself a Rhubarbarella, a smoky bourbon cocktail made with smoked rhubarb amaro and dry curacao, and get a strawberry rose panna cotta with roasted rhubarb and sesame crumble (also a Restaurant Week special) for dessert.
