You can’t go wrong with the local pie heavyweight’s classic strawberry rhubarb pie. Their West Seattle location also has a boozy strawberry rhubarb milkshake, with rhubarb compote, strawberries, fresh bananas, rum, banana liquor, vanilla ice cream, and piña colada.
The much-loved vegetarian cafe serves a spinach and rhubarb salad with spinach, watercress, fire-roasted asparagus, roasted rhubarb, whipped mint chevre, toasted walnuts, and ginger orange rhubarb dressing, available for breakfast, lunch, and dinner. At her adorable Greenwood bakery, pastry wizard Rachael Coyle has been busy whipping up baked goods like rhubarb croissants (if you haven't tried one of her croissants, you owe it to yourself to amend this grievance post-haste), rhubarb olive oil Bundt cake, walnut thumbprint cookies with a dollop of rhubarb jam, strawberry rhubarb macarons, a rhubarb galette, poached rhubarb pavlova, and a Victoria sponge (a proper English cake you may know from The Great British Baking Show) with rhubarb jam sandwiched between yellow cake and mascarpone cream.
The plant-based ice creamery's April seasonal flavor "Tend the Terra" is made with hemp milk with a swirl of preserved rhubarb caramel and cacao nibs.
Autumn Martin's wildly popular molten chocolate cake emporium currently serves a rhubarb bread pudding.
