Scratch Deli's Ian Thackaberry has a pleasingly Dickensian name and an exceptionally nice demeanor, and he uses all-local ingredients: Dutch crunch rolls from the Essential Baking Company, meats from Northwest collectives or Painted Hills. His highly delicious sandwiches—like Cuban pulled pork, Caprese, a quasi–banh mi, plus gluten-free and vegan options, $7 or $8 each—are stuffed so fatly full, half is probably enough, so bring a friend.
