Finally! Middle-of-the-night pizza by the slice! Juliano's is a new Capitol Hill hole in the wall serving made-to-order pizza into the wee hours every night. Owner Juliano Cabrini makes your slice to order and then sends it on a slow journey through a conveyer oven while you stand by salivating. The house four-cheese special is far from a regret-laden gut-bomb: an extra-delicate herbed crust cradles homemade tomato sauce and a reduced-fat four-cheese blend in place of greasy mozzarella. You can concoct your own combo from fresh toppings including spinach tossed in balsamic vinegar, prosciutto, bacon, juicy sun-dried tomatoes, brie, Swiss, even a pretty damn delicious vegan cheese. Whole pies are also available; call first if you don't want to wait.
