Nothing bad ever happens in Madison Park (too much money and sparkly water), but nothing excellent was happening either. Then Cormac Mahoney—who cooked at
Sitka & Spruce, then ran the lauded
Tako Truk pop-up restaurant out of the 14 Carrot Cafe (octopus tacos!)—opened Madison Park Conservatory. He describes the menu as "delicious plants and animals with a squeeze of lemon”; it’s nothing too startling, mostly simple-sounding dishes in the New International mode, but lord, it is, by and large, SO GOOD. The trout is a standout: lemony here, smoky there, it’s a fish to tear apart with someone you love (using your fingers, if you want). As far as seating goes, downstairs feels like Dining Out, while upstairs is the lower-ceilinged and more relaxed bar; when the weather's nice, the tables outside are coveted. Wherever you’re sitting, let the staff talk you into dessert.
