Roux is the sit-down restaurant of
Where Ya at Matt's Matthew Lewis—it's named after the magic combination of hot butter and flour that starts out many, many recipes in his native New Orleans. At Roux, you can expect the same food that's made Matt's truck famous—from jambalaya and gumbo to beignets and pecan pie—with Mikey Robertshaw cooking. (Robertshaw was
the head chef at Local 360, where his work got good reviews until he was reportedly fired for being too loud in the open kitchen. Lewis indicates he's looking into some sound-dampening for the space, but also seems philosophical about chefs being shouty.) Roux is where the Buckaroo Tavern used to be in Fremont. We're betting this is gonna be good.
