Mezcal is the new tequila! Except not: While tequila is a kind of mezcal, the opposite is not true, and people in Oaxaca have made it for approximately forever. (Also, tequila continues to do its job very wellโ€”sip some Centenario if you have doubts.) As part of Seattle Cocktail Week, you can taste a bunch of mezcals while getting (possibly over-) educated about it at Liberty tonight. Alternately, the bar at brand-new Mezcaleria Oaxacaโ€”the new sibling to Ballardโ€™s very-much-loved La Carta de Oaxacaโ€”has every kind of mezcal available in Washington State.   1. I’ll stick with tequila, thanks. Mexcal tastings were all the rage in Mexico City a couple of years ago. Frankly, it tastes like everclear run through a barbecue to me. Pulque is the current big thing in DF, but it has a shelf-life of 3 to 4 days max. it also has the consistency of an oatmeal/metamucil smoothie.
