I’m not the least bit squeamish, but this Serious Eats photo of a whole chicken splorting out of a can (“Homestyle!”) seriously squicked me out:

  1. If you look in the bottom of the pan it looks like an a couple of raw eggs come out of the can, or chicken, too.

  2. Looks like chicken confit. Perfectly normal. Everyone is familiar with duck confit. Same thing, but with chicken. (Confit is a pre-refrigeration technique where you use salt and fat to preserve something)

  3. I’m feeling a little under-the-weather stomach-wise anyways, and that picture is doing me no favors at the moment. Blech.

  4. @14, and if you don’t have one of those, but do have one of these, what would you suggest? Fresh chickens are not around in all situations; neither are freezers.

    Canned foods are a major, major lifesaver in the history of human eating habits, and are a cornerstone of any “eat local” regimen, particularly in places where you can’t grow everything year-round. There are plenty of places where chickens come under that heading.

    There is something indescribably heady and exciting about low acid foods, thermally cooked in hermetically sealed containers.

Back in the olden times of my youth, when fresh food was generally frowned upon and it was generally assumed that we would be eating our food in pill form in the 21st century ala the Jetsons, my dad made the most fabulous chicken and dumplings, using canned chicken. I have tried numerous times to make chicken and dumplings as delicious with fresh chicken and while I can whip up some pretty tasty vittles, I have never really attained the sublime perfection of my father’s version. I have actually sought out canned chicken, but to no avail. My search will begin anew.
    On an interesting side note, my spell check doesn’t recognize the word “vittles”, and suggests “tittles” in it’s place.
    What the fuck is a “tittle”?

  9. Dude, I have eaten canned chicken. Many times. But, it was pieces of chicken in a can (incorporated into a dish). Not a whole chicken packed in jelly. It may all end up in the same place, but there is a definite aesthetic difference here…

  10. @22, did you mean country or cunty rube? because in any case, I would think rubes of either sort would have had exposure and knowledge to & of this form of canned poultry product; perhaps you should modify your suggestion to imply that, rather, it is snobby city folk who are unschooled in things about canned chk’n.
