@2- I went to a fancy pants liberal arts college in the 90s and the majority of my professors were older, white, and male professors. The gender balance was evening out a bit, but female professors weren't getting tenure as often as males for some reason. Now that I think about it the literature and writing departments were particularly white and male. My major (history) was more diverse. Fine Arts may have actually been majority female in professorship. So what I'm saying is that I find it very believable that one could have older white male professors for one's MFA.
Poor White Privileged Baby. If you don't like it because you can't write what you want, too bad. When you submit "works" for publication. You give up your first amendment rights. It's the publisher who can say what they want with your words. Thats if you sell to them....the Old White Dudes.
When you're a "writer", you depend on someone else. That someone will have control. If you don'y like it, get another job. Or, self publish.
Criticizing the very industry you want to be a part of helps your cause a whole lot.

Aren't there more female readers than male in the fiction market? I'm not saying her perceptions don't have their reasons, but they may not be based on where the money is.
I haven't read her books and now I know I don't need to. How can so much of someone's brain be taken up with the attendant trivia of "being a writer?" Your MFA program, the other MFA students and teachers you know, the other Granta suck-ups you know, your writers' block ... that shit is deeply not interesting. At all.
