The Innkeeperâs menu says âGrilled Mexican Cheese,â but itâs not a sandwich. This is cheese, grilledâslices of firm queso fresco, toasty-browned and lined up in a shallow dish of spicy, smoky green chili salsa. The limey-tartness of tomatillo counters the saltiness of the cheese; all thatâs needed is the Innkeeperâs also-awesome tortilla chips, made crispy-hot to order, $2 for a basketful.
