The Innkeeper’s menu says “Grilled Mexican Cheese,” but it’s not a sandwich. This is cheese, grilled—slices of firm queso fresco, toasty-browned and lined up in a shallow dish of spicy, smoky green chili salsa. The limey-tartness of tomatillo counters the saltiness of the cheese; all that’s needed is the Innkeeper’s also-awesome tortilla chips, made crispy-hot to order, $2 for a basketful. The people are nice, the place is low-key (especially for Belltown), the drinks are cold, and the snack is perfect. (The Innkeeper, 2510 First Ave, www.innkeeperseattle.com, 3 pm–2 am, $7, 21+)
