โ€œBreathe the air, drink the drink, taste the fruit, and resign yourself to the influence of the earth,โ€ Henry David Thoreau wrote. This is the quote that sommelier Luke Wohlers (formerly of RN74, the Herbfarm, and Eleven Madison Park) chose to represent his 12-seat wine-bar pop-up at Little Uncle in Pioneer Square. While that brick-walled, subterranean space bears no resemblance to the Massachusetts pond, his wide-ranging wine listโ€”with 2.5-ounce pours going from $4 to $24 eachโ€”and low-key imparting of wine knowledge are reportedly transcendental.
