Seven Beef Is Open
From Sophie and Eric Banh (Monsoon, Ba Bar) comes Seven Beef, a modern steakhouse specializing in grass-fed, Northwest-raised beef that’s butchered in-house. Working with whole cows means the menu offers classic cuts of beef such as T-bone and New York strip, but also rare cuts like oyster and teres major. The Banhs also serve “Bò 7 Món,” their take on a traditional Vietnamese seven-course beef dinner. (For vegetarians, there’s a hearty menu called “Seven Beet.”) If the idea of parking your car is just too much for you, take note: Seven Beef has valet parking.
And opening today: CaliBurger, the first US outpost of an international In-N-Out-copying chain, in the University District.
Pike Brewing Company Adds Owners, Plans Expansion
This week, just as they were about to celebrate their 26th year in business, Pike Brewing owners Charles and Rose Ann Finkel made two big announcements: First, they have expanded the brewery’s ownership to include three longtime employees—Drew Gillespie, vice president operations; Patti Baker, vice president controller; and Gary Marx, executive chef—who collectively have been at Pike for 45 years. Pike is also planning an expansion and will grown into 5,500 more square feet of space in Pike Place Market. They hope to open the new Pike Brewing in the spring of 2016.
The announcements feel particularly significant considering the recent purchase of longtime local craft brewery Elysian by Anheusuer-Bush InBev. Indeed, the Finkels are calling their business moves “selling in” and say they are “ensuring that Pike Brewing remains an independent and local company.”
